So would two Large Iron Shields stack to 380%?

Technically (rather, thats +380% of your base parry), but if you note the code, it more or less caps at 90 (total), and there are mitigating factors with monster damage accuracy.

I've gotten to Level 15~ Swordsmanship with an Elven Shortsword and Iron Shield... and I'm at Level 1 Parry with 0%... am I bugged?

Nope, you just need more action. Go to sfor and get beaten up by some skeletons. Your parry will raise sooner or later. :D

How good would the double troll lobbers in foutpost train your parry? And shouldn't gauntlets have a high parry modifier since well.. it's martial arts.

Troll lobbers would be very good for training parry, if you can stand the pressure ;-)
